I'm thinking about brewing a batch of Norwegian Stjørdalsøl for my stepsister's wedding (Her soon-to-be MIL is Norwegian). It's in the same family as Finnish Sahti but made with smoky homemade malt. My question is about the juniper. The Common Juniper (Juniperus communis) doesn't grow very far south of Canuckistan, we only have Eastern Red Cedar (Juniperus virginianus) in Alabama. Has anyone brewed with virginianus? I know it's not poisonous, as it's been used to make a folk-remedy tea in Appalachia but I don't know how closely the flavor would match the more northern species. I may just make a tea to see if I like it. I can easily get berries from communis on the Internet so I might just do that. What do y'all think?
Anyone Made Sahti with Local Juniper?

Communis cane found around here if you know where to look. I would get the communis off the net. Penzey's has juniper berries, probably communis.
I'm curious about this. can you tell me more about what this is and how it is made?
